This is a common gesture that men will make, and does not always mean the person is on the defense. If the person has his hands cupped in his lap, some people may see this negatively, while others realize that men will often maneuver the hands/feet, arms and the like to a comfortable position while speaking.

Men will also sit with there legs slightly apart while sitting, which means they are relaxed and open to talk. Some will even move their leg back and forth while talking, but it doesn’t necessary mean the person is anxious or nervous.
